* 1 cup almond butter
* 1/2 cup monk fruit or coconut sugar
* 1/4 cup maple syrup
* 3 tbsp almond milk
* 2 tbsp coconut oil
* 2 eggs or flax eggs
* 1 tsp vanilla
– 1/2 cup cacao
– 3/4 cup almond flour
– 1/2 tsp baking powder
– 1/4 tsp salt

350F for 22-24 mins
Cool at least 15-30 mins

Spring Roll Salad:
1 cup romaine lettuce, chopped
1/2 cup coleslaw mix, chopped
1 small cucumber, chopped
1/4 bell pepper, chopped
1/2 avocado, cut into cubes
1/3 mango, cut into cubes
2 tbsp green onion, chopped
1/2 cup Konjac noodles
Protein of choice (I like chicken or shrimp)

1 large spoonful peanut butter
splash of warm water
1 tbsp coconut aminos or tamari
1 tbs rice vinegar
1/4 tsp garlic powder

Eggplant lasagna:
– 1 eggplant
– 1 jar tomato sauce
– 1 package meat of choice
– 1/2 cup vegan parm
– 1 tsp Italian seasoning
– 1/2 tsp garlic powder
– 1/2 tsp onion powder

Cashew ricotta:
– Juice 1 lemon
– 1 cup cashews soaked 1 hr in hot water

Bake eggplant 7 minutes at 400F

Bake whole dish at 350F for 30 minutes covered, take lid off and bake another 10 or until cheese bubbles.
